Beet and orange salad

Ingredients:

  • 5 Large Beets

  • 3 Oranges

  • 4 Ounces of Feta Cheese, crumbled

  • 4 Ounces of Pumpkin Seeds

  • Olive Oil Salt

Directions:

Step 1 Preheat Oven to 325. Place pumpkin seeds on baking tray, drizzle with olive oil and salt. Toast in oven for 45 minutes. Step 2 Wash and peel beets. Shred with grater and allow to rest. Step 3 Zest peel of two oranges. The more zest the better. Set aside. Peel and cut the oranges into bite size pieces. Step 4 Juice one orange. In small bowl combine orange juice. 1 part orange juice 1/4 part olive oil, Step 5 Discard the cinnamon stick and star anise. La Combine beets, oranges, orange zest, toasted pumpkin seeds, and juice olive oil mixture. Stir well. Fold in crumbled feta and enjoy.
