Rainbow Breakfast Hash

Ingredients:

  • 1 sweet potato

  • 3 baby blue potatoes

  • 3 yellow baby potatoes

  • 3 cloves of garlic

  • 1 white onion

  • 4 cups washed kale

  • 1 red pepper

  • 4 eggs

  • olive oil

  • salt and pepper

  • 4 ounces Feta cheese (optional, can replace with other cheese)

Directions:

Step 1 Wash and peel sweet, blue, and yellow potatoes. Cut into bite size pieces. Chop garlic, onion, and red pepper.

Step 2 Over medium heat, sauté onion in olive oil for three minutes. Add in garlic, potatoes, and red pepper. Sauté for 20 minutes on low heat, stirring occasionally.

Step 3 While the potato mixtures sautés, Wash the kale and remove the stems. When potatoes are fully cooked, add in the kale and eggs. Add salt and pepper to taste. Continue cooking until kale is wilted and eggs are cooked.

Step 4 Remove from heat, gently stir in the feta cheese and enjoy.
